There is a big conflict in the realm of serious grillers. Does meat need to have BBQ splashed on top in order to taste good, or does properly cooked meat have a better flavor if left alone?

    Beau, I'm with you on this! I lived in Southern Brazil, where they salt the meat and roast it over an open fire. There is nothing to compare with the taste of unadulterated meat! Now, don't get me wrong, I enjoy a good BBQ sauce here and there, but nothing compares to natural meat flavor when it's done right!

      Even though I'm going to vote for natural meat, I still love both. I think that BBQ that is done right shouldn't overpower the flavor of the natural meat.

      It doesn't help that it's hard to get good quality meat in the U.S. You're not going to find it in most grocery stores.

    I am a fan of natural meat may be a light rub of spices. I feel BBQ sauce just makes the meat taste like well BBQ sauce. These things were invented in the depression era when the meat tasted bad and hence it made sense to use it.

    People who are using this are missing out on the real taste of the meat.

    The right sauce can make all the difference, but so far this poll is lop-sided. Everyone seems to agree with your argument. So, what do you think of marinading the meat? I tend to avoid lathering on the sauce afterwards, but I like a good marinade or spice rub before its cooked.

    Lots of Barbecue sauce has Sodium Benzoate in it, which studies have shown to adversely affect your DNA, I try to avoid the stuff. Corn syrup, which can have heavy metals in it is also a common ingredient. In addition, if it is in a clear plastic container, the container can leach bisphenol A. The acid from tomatoes especially causes the bisphenol A to get into the condiment. Bisphenol A is an estrogen mimicker, it may very well be responsible for the severe drop in testosterone found in men over the last thirty years and the early puberty reached by women during that same period of time.

    Also, side note, barbecued meat is carcinogenic, I try to pick off any black areas on the meat, and if I am doing the cooking myself I am careful to keep the flames low enough so as to minimize meat charring.
